The Jersey Giant was developed between 1870 and 1890 by brothers John and Thomas Black in Burlington County, New Jersey. Their goal was to breed a bird large enough to rival turkeys for meat. Using Black Javas, Black Langshans, and Dark Brahmas, they created a hefty chicken originally dubbed the Black Giant. The name later changed to “Jersey Giant” thanks to breeder Dexter P. Upham, who wanted to honor both the breed’s origin and the state.

By 1922, the American Poultry Association officially recognized the breed in its Standard of Perfection. Today, Jersey Giants are recognized in three color varieties: Black, White, and Blue.
